Vietnamese Cuisine

Vietnamese cuisine is famous the world over for its deliciousness. The french legacy has heavily influenced the cooking, which focuses on simple, well-prepared ingredients. Commonly found ingredients in Vietnamese cuisine include: fish sauce, soy sauce, lemongrass, mint, coriander, ginger, plenty of chilis, basil, lime, and plenty of fresh vegetables. Pork is also a very common feature in many traditional dishes.

Here are some common dishes (suggested by Wikipedia and Lonely Planet) that we will more than likely get an opportunity to sample:

Bun rieu cua - Commonly eaten for breakfast., this is a noodle soup with crabs from the rice paddies.

Chao - Another breakfast food, this is a rice porridge.

Pho - A traditional dish of the north, this is a noodle soup which frequently features beef (Pho Bo) or chicken with flat rice noodles. The broth is the key to the dish and is made of boiled beef bones, shallot, ginger, fish sauce, black cardamon, star anise, and cassia.

Banh Mi - A sandwich made with french baguette has many different combos. Often it has pate, sausage or grilled pork or pork belly, etc. with mayonnaise, soy sauce, fresh coriander, pickles, and pepper.

Banh Xeo - A rice crepe that is crispy and chewy and is often filled with pork, shrimp, mung beans, and bean sprouts.

Canh Chua Ca - A fish soup common in the Mekong Delta. The fish is often catfish or snake head and is accompanied by tomato, pineapple, vegetables such as okra or bean sprouts, and a broth of tamarind and nuoc mam, which is then topped with green herbs and fried garlic.

Bun cha - Grilled pork with crab spring rolls, herbs, and vermicelli.

Banh ghoi - Deep-fried pastries made with pork, mushrooms, and vermicelli.


And let's not forget the drinks!

Bia hoi - fresh draught beer  (try it with bar snacks like roast duck or dried squid!)

Truly a coffee lover's heaven, there are many ways to try traditional Vietnamese caphe

Caphe  - Traditional coffee is served with an aluminium top that slowly drips the coffee into the glass tumbler below which has condensed milk. Or try it Caphe den, i.e. black coffee

Ultimate Packing List!

Our trip is almost here! Here is my go to packing list. Please remember that you will be responsible for carrying your own luggage, so pack as light as possible! Keep everything important in your carry-on, such as prescriptions, medications, passport, toothbrush, etc.
  • Passport!
  • Photocopy of your passport photo page (carry this separately from your passport)
  • Work clothes (I recommend long pants for the extra protection as well as layers as mornings can start off a bit cool and afternoons can end quite warm.) Expect to get dirty!
  • Closed-toe, STURDY shoes. I've seen all sorts of shoes show up on my worksites in Las Vegas and all I can say is that Toms, Uggs, Converse, or anything of that nature will not be much help if you drop something heavy on your foot. If you don't have work boots, then sneakers or hiking boots should suffice.
  • Baseball hat or bandana 
  • Work gloves (the affiliate will have their own to supply you with, but it's really nice to have ones that fit well)
  • Casual clothes for evenings and r&r
  • Flip flops or sandals
  • Comfortable walking shoes
  • Light jacket or sweatshirt
  • One nice outfit
  • Plastic bag(s) for dirty clothes
  • Toiletries
  • Allergy meds
  • Basic first aid kit (Deanna and I will each have one as well)
  • Sunscreen
  • Insect Repellent
  • Antibacterial wipes or sanitizer 
  • Swimsuit (you never know when an opportunity to swim with come up!)
  • Travel detergent and line to hang clothes on 
  • Voltage adapter 
  • For coffee drinkers: I recommend instant coffee packets in case good coffee is hard to come by
  • Favorite snacks such as granola bars or nuts in case you don't take to the food right away
  • Powdered gatorade or something similar to help with dehydration
  • Cards or travel games
  • Photos of family and home to show your new friends
  • If you want, bring a book or piece of writing for our daily reflection meetings to share with the group
  • Camera
  • Emergency contact numbers of family and friends back home

Vietnam 40 Years Later


As many of you are surely aware, the 40 year anniversary of the end of the Vietnam War was April 30th. For many of us the Vietnam War is something we've only known through history books, documentaries, and our parent's memories. However, the aftermath of the war is still present in the daily life of many Vietnamese and continues to have an impact. I have collected some articles below for your reference.

About our destination

Fun facts about Vietnam:
  • Vietnam has a literacy rate of 94%.
  • An estimated 10 million motor bikes travel on the roads of Vietnam every day.
  • TET is the “Festival of the First Day”.  It celebrates Christmas, birthdays, and the new year all in one holiday.  The whole nation celebrates turning a year older together and they do not celebrate individual birthdays.
  • Vietnamese beaches are among the most beautiful in the world.
  • Vietnamese cuisine is considered one of the healthiest.
My Tho, Tien Giang
My Tho is the capital of the Tien Giang province and is located in the Mekong Delta, which is known as the country's rice basket. (Click here to practice your pronunciation). Named after the My Tho river, the city was founded in the late 17th century by Chinese refugees fleeing what we know today as Taiwan after the Ming Dynasty collapsed. At that time it was part of the Khmer Kingdom and was later annexed into Vietnam in the 18th century. It now has a population of aprox. 220,000 and is a bustling commercial center.

In addition to the floating markets on the river, sightseeing highlights include the Vinh Trang Temple, the Cao Dai Temple, and the Dong Tam snake farm. Lac Hong Park provides lovely views of the river's traffic.

Habitat in Vietnam
Habitat for Humanity Vietnam began in 2001 and since then has served over 11,400 families with housing and 51,000 individuals with technical assistance. In addition to construction of new houses, Habitat Vietnam also works on repairs and upgrades, water and sanitation projects, securing tenure, and technical assistance. Like all Habitat affiliates and national offices, it operates on the partnership model whereby families and individuals being served agree to partner with Habitat, i.e. families who meet the criteria agree to participate in the construction of their homes, which they then purchase through a 0% interest loan from Habitat. Loan repayments are then put into a revolving fund, enabling Habitat to serve more families. Habitat homes are decent, affordable and provide stability as well as self-empowerment. It's a hand up, not a hand out!

According to Habitat Vietnam almost "10 million live in sub-standard and undignified housing and over 38% of the country’s rural population lack access to clean water and over 50% lack adequate sanitation."

Another Team Member!

Noam Avidov - Chicago, IL

I’m 30 years old, born and raised in Israel. I’m the youngest of five sisters and have 6 nieces (and two new nephews - they ruin the whole girls-only thing in my family…). Right now I enjoy the beautiful Chicago weather, after moving there almost two years ago to study MBA at University of Chicago. I’m living with my wonderful Husband Itai, who loves to discover with me new places for travelling or feasting. Besides that, I’m an avid yoga practitioner and an amateur cook.

Before Chicago, I lived in Tel-Aviv and worked at Citibank. Prior to that, I served at the Israeli Defense Forces as an Infantry Mortar Instructor.

In Israel, I volunteered as a mentor in a Microfinance program for African refugees. I also provided free financial education services in a welfare department for a year, which was a life changing experience.


Can’t wait to meet all of you and become a part of HFH Vietnam!

Meet More Team Members


Ammar Mukadam - New York, NY

I am currently a student at Columbia Business School in New York and will be joining Bain & Co later this year. I am South African by nationality, Indian by ethnicity but was born in Iraq. Before business school I lived in Cape Town, South Africa and worked in the finance and strategy department of a national grocery retail chain called Pick n Pay. I enjoy playing cricket and squash, and am an aspiring photographer. Fun fact, I was once on a game show called the Weakest Link.











Samantha Rodriguez - Puerto La Cruz, Venezuela

My name is Samantha Rodriguez, I’m a Honduran-American that has lived in many places and has seen poverty too much to not try and help. I saw children in Africa starving and begging for food when I was a resident of Nigeria, I have seen orphans in both Venezuela and Honduras that have needed better facilities, and I have seen the people who have not had homes sleeping in parks, side of roads, and steps of buildings. Going to Vietnam would be a small help, but a help none the less. I want to see that happy, grateful faces of those receiving the aid they deserve. I love playing sports, fishing with my dad, and photography. I’m super excited to gain experiences from this meaningful trip/mission. 


B. Suzanne Brown Rodriguez - Puerto La Cruz, Venezuela

I was born and raised in Atlanta, Georgia. I am currently living in Puerto La Cruz, Venezuela. My husband is from Honduras and when we got married in the mid-80’s, we moved to Honduras.  My husband’s job with Chevron keeps us on the move. I have only lived in the US (Houston) three years since I got married. The other countries I have lived in are Panama, Nigeria and Venezuela.

I am a homemaker and I enjoy traveling, reading and walking. I am very involved at daughter’s school. I keep busy with PTO activities and I also serve on the “School Improvement Team” as well as the “Board of Directors”. 

I have four children ages 16 to 25. My three older children are all in college in Houston and College Station. My youngest, Samantha, is still in high school in Venezuela. She is accompanying me on this trip.  This is my second Habitat Global Village build. I traveled back to Honduras for my first GV and I loved experience. Especially since Honduras is very dear to my heart.  I am very excited for our upcoming trip to Vietnam.


James Witkin - New York, NY

James Witkin had lived in New York City for the past 5 years and will be joining the Tien Gang Habitat for Humanity program during his break between finishing business school and starting a new job in consulting. While he has never been to Vietnam before, he loves traveling in general and is excited to see a new part of the world while also helping provide housing for those in need. In his spare time, James enjoys hanging out with friends, playing pickup soccer, and eating delicious food.











Andriana Diez - Philadelphia, PA (soon to be New York, NY)


Andriana Diez is a second year student at The Wharton School, currently earning an MBA and an MA in International Studies.  Originally from the suburbs of New York, she will be returning to the New York area after graduation to join Bain & Company, a management consulting firm, in 2015.  Prior to Wharton, Andriana worked at J.P. Morgan in both New York and London.  She graduated from Yale University in 2008 with a BA in Psychology.  Andriana's interests include cooking (and eating), planning events, learning new languages, and traveling.  While her travels have taken her many places, she has never been to Vietnam, and she looks forward to getting to know both the fellow volunteers and the local communities where the team will be building! 




Evan Vittor - New York, NY

I currently live on the Upper West Side of Manhattan, where I am a second-year student at Columbia Business School. I plan to work as a management consultant in New York City after graduation. Prior to Business School, I worked for the Disney-ABC Television Group in New York and Los Angeles. I enjoy running, reading, and traveling. I am originally from Kansas City.

GENERAL Loves travelling and exploring, food and beer; atheist; believe in justice. Have boyfriend, no children. Want to work less and spend more time volunteering and travelling.

Meet Your Team Members

Gobin Chandra - Ann Arbor, Michigan

Gobin was born and raised in New Delhi, India and is currently a 2nd year Master’s in Business Administration student at the University of Michigan Ross School of Business. He lives in Ann Arbor, Michigan, with his wife who is a doctoral student in Counseling Psychology. Before arriving in Ann Arbor, Gobin worked in the healthcare industry in Washington DC, prior to which he worked in Financial Services in Mumbai, India. Post MBA, Gobin will be joining a consulting firm in Chicago and begin working by fall 2015. Gobin is a big foodie and loves to cook different kinds of cuisines, especially Indian food. His other interests include learning new sports, and he has recently started playing squash.





Nancy Walton -  Hanover, New Hampshire (soon to be New York, NY)


Nancy is a student at the Tuck School of Business at Dartmouth in the Class of 2015. After Tuck she will be working for Bain & Co in New York. Prior to Tuck, Nancy worked for Fidelity Investments in Boston and received her BA from Tufts University. When not in class, Nancy loves to run and spin, with a particular addiction to Flywheel, and throw dinner parties with friends. She loves travel and is excited for her first trip to Southeast Asia. 

Becky Canfield - Chicago, IL (Soon to be San Francisco, CA) 


Becky Canfield is a senior at Northwestern University double-majoring in Communication Studies and Psychology with a certificate in Integrated Marketing Communications.  Having grown up in St. Louis, and currently attending school in Chicago, she is thrilled to be moving out of the Midwest to San Francisco next year in her new position as a Public Relations Manager for Adobe Systems.  Apart from her professional life, Becky enjoys pursuing outdoor activities such as hiking and running.  Though she is also has a knack for marathoning shows on Netflix from the comfort of her own home – especially when in the company of friends



Kimberly Kirkhum - Raliegh, North Carolina

I was born in Fayetteville, NC but moved to Giessen, Germany when I was five because my father got a job teaching at a DoDDS school there.  I lived there until I graduated from high school, when I moved back to NC to attend UNC-Chapel Hill. At Carolina I majored in Music performance for clarinet and then received my Masters in teaching.  I have now been an elementary music and band teacher in Raleigh for 7 years.  I enjoy playing tennis and other sports and board games with friends.  My wife, Ginny Clayton, and I have volunteered some with habitat before and also enjoy travelling quite a bit.  We are very much looking forward to this trip!

Graduated in 2007 from UNC-Chapel Hill: BA Spanish Lit, MAT (Master of Arts in Teaching) in English as a Second Language

Hobbies: Volunteer medical Spanish interpreting, playing French horn in community band, photography, running, reading, traveling!

I'm excited to get to know my other team members, whether it's on adventures big and small to be found around My Tho or relaxing and playing cards together during downtime.


Ankit Jain - Chicago Illinois 


I'm originally from New Delhi, India though I grew up in Singapore. I went to school at the University of Chicago where I studied Economics. I then moved to San Francisco where I worked for 3.5 years as an economic consultant. I'm now finishing my MBA from the Booth School of Business in Chicago before starting a job as a management consultant later this year.













Byran Michalis - Philadelphia, PA (Soon to be New York, NY)



I am currently finishing my MBA at The Wharton School in Philadelphia and will be moving to New York City in the fall to work for Bain and Company. Previous to business school, I studied Civil Engineering at Rensselaer Polytechnic Institue and participated in Habitat for Humanity during my time at RPI. After RPI, I worked for Turner Construction Company in New York City before enrolling at The Wharton School. I am currently Co-President of Wharton's chapter of Rebuilding Together Philadelphia, which is a similar organization to Habitat for Humanity. I am extremely excited for the build and look forward to meeting the team! 


Morgan Louks - Toronto, Canada



Hi my name is Morgan Louks. I am 19 years old turning 20 come February. I am Canadian and currently in university majoring in English and minoring in History with the hopes of becoming a author and highschool teacher once I graduate. I am a cheerleader and have been cheering for 6 years now and I was a competitive gymnast for 10 1/2 years before then. I am trilingual knowing English, French and Spanish, though my Spanish is at a beginners level. I am a really big football fan and will defend my team the Buffalo Bills all day everyday. I love to read and write and am a really big nerd who loves to read comic books and can spend hours in a comic book store. I also can't wait to go on this trip with everyone. (p.s. My hair is no longer purple however I do tend to change my hair color a lot so by the time we go on this trip I don't know what color my hair will be)
